Ingredients:
-2 lbs Chicken Breast (907g)
-1: 14.5 oz Box Barilla Protein+ Pasta (392g dry)
-2 Cups Reduced-Fat Mexican Cheese Blend (224g)
-1 Onion, diced (150g)
-2 Bell Peppers, diced (300g)
-40g Honey
-1: 7oz Can Chipotle Peppers in Adobo Sauce (199g)
-1 Tbsp Garlic Powder
-1 Tbsp Paprika
-1 Tbsp Black Pepper
-2 Tsp Salt
Sauce:
-1 Cup Fat-Free Cottage Cheese (225g)
-1 Cup Tomato Sauce (240g)
-1/2 Cup Almond Milk (120mL)
-2 Tbsp Minced Garlic (16g)
-Juice of 1 Lime
Instructions:
1.) Cook chicken with seasonings, honey, chipotle, and veggies in crockpot (high 3–4 hrs or low 6–8 hrs).
2.) Cook pasta near the end; drain.
3.) Blend cottage cheese, tomato sauce, milk, garlic, and lime.
4.) Shred chicken, stir in sauce and cheese until creamy.
5.) Add pasta, heat through, cool, and divide into 6 containers (or eat now).
