Today I’m Meal Prepping an amazing lunch to help me keep on track with my fitness goals. Part of living a healthy lifestyle involves planning for those moments when you NEED food but don’t have time. As a busy Mom of two kids, I definitely know what it’s like to grab the first convenient thing. I still do it! But everyday is a new one and meal prepping is a life saver when I’m ravenous and NEED FOOD. I’m not vegan but this recipe is vegan and vegetarian friendly, really just great for anyone who is looking for a healthy scrumptious lunch! Recipe:

1 and 1/4 Cup UNCOOKED Quinoa2 Cups Water
— (Cook your quinoa according to the directions on your package.)

– Bunch of Green Onion Chopped
– Bunch of Cilantro
– Juice from 3 Limes
– 2 Mangos Diced
– Can of Black Beans (free of preservatives)
– Drizzle of Olive Oil
– Salt and Pepper according to your own taste

Mix up all of the fresh ingredients with COOLED quinoa. ENJOY! Yummmmm!
