Ingredients:
-1.5 lbs Chicken Breast, Raw & Skinless (680g)
-1.5 Cups Orzo Pasta, Dry (240g)
-3 Cups Chicken Broth (710mL)
-1/2 Cup Sun-Dried Tomatoes, Chopped (80g)
-2 Cups Baby Spinach (60g)
-1/2 Medium Onion, Diced
-1 Red Bell Pepper, Diced (150g)
-3 tsp Minced Garlic (15g)
-1/2 Block Reduced-Fat Cream Cheese (4 oz / 113g)
-1/2 Cup Grated Parmesan Cheese (50g)
-2 tsp Italian Seasoning
-3/4 tsp Salt
-1/2 tsp Black Pepper

Instructions:
1.) Dice and season chicken, then cook until browned; remove.
2.) Cook onion, pepper, sun-dried tomatoes, and garlic, then stir in orzo and toast.
3.) Add broth and chicken, cover, and cook until orzo is tender.
4.) Stir in cream cheese, parmesan, and spinach until creamy.
5.) Divide into 4 servings and store or serve.
