High Protein, low calorie Shepards Pie- healthier meal prep ideas

1lb 91% lean ground beef
1/2 pack 93% lean ground turkey
1 onion
1 cup frozen peas & carrots
1 3/4 cups beef broth
3 ounces tomato paste (half can)
1 tbsp worstershire
1 tsp each- onion and garlic powder, salt and pepper
Dash paprika
2 bay leaves
*optional for extra flavor- dash of thyme, sage, rosemary
*optional for thicker consistency add 1 tbsp cornstarch mixed with 1/3 cup cold water

Mashed Potatoes
2 cups potatoes
1/3 cup low fat cottage cheese
2 tbsp melted light butter
1/2 cup (or more) almond milk depending on level of fluffiness
Salt/pepper/garlic powder

1. Peel/chop/boil potatoes (I microwave to expedite process)
2. Brown meat and drain fat
3. Add onions and garlic, stir
4. Add in rest of meat mixture ingredients, bring to boil and let simmer on low
5. Blend cottage cheese and milk
6. Add all mashed potato ingredients to a bowl and mix until desired consistency
7. In a baking dish (I use smaller) pour in meat mixture. Top with mashed potatoes
8. Cover and bake 20 minutes, bake an additional 10 minutes uncovered
9. Cool and serve
