Serves: ~12 tikkis | Time: ~30 mins
🟢 Preparation:
Prepare 1 cup moong sprouts or microgreens.
Soak ¼ cup watermelon seeds in water for 6 hours.
🟢 Ingredients:
Tikki:
1 cup moong sprouts or microgreens
1 medium carrot
1 medium potato, boiled
1 green chilli, chopped
Handful of coriander leaves
1 inch ginger
Flavouring:
1 tablespoon flax seeds
1 tablespoon sesame seeds
1½ teaspoons coriander powder
½ teaspoon turmeric powder
1 teaspoon amchur powder
¾ teaspoon rock salt
Coating:
¼ cup peanuts, roasted and powdered
Creamy Dip:
¼ cup watermelon seeds, soaked
1 teaspoon lemon juice
½ teaspoon roasted cumin powder
½ teaspoon black salt
½ cup water
Assembly:
Green chutney
Sweet imli chutney
¼ cup pomegranate seeds
Pinch of roasted cumin powder
🟢 Method:
1. Add all tikki ingredients to a chopper and pulse into a coarse mixture (do not overblend).
2. Transfer to a bowl, add flavouring ingredients, and mix well.
3. Shape into small round tikkis and coat with powdered peanuts.
4. Heat a cast iron tawa, grease lightly with coconut oil, and cook tikkis on medium flame for ~3 minutes on each side until golden and crisp.
5. For the dip, blend all ingredients until smooth.
6. To assemble, spread creamy dip in a bowl, place tikkis, and top with chutneys, pomegranate, and cumin powder.
