Cheesy Broccoli and Chick’n and Rice (Vegan)

2 cups brown rice cooked in 4-5 cups broth/water
1-2 cups chicken substitute or chickpeas (One of my favorite packaged chicken subs is Quorn cubes cook/stir fry a few minutes)
1 bag of broccoli (steamed 1-2 minutes)
1 tsp onion powder
salt (or salt substitute) and pepper to taste
1-2 cups of plant-based cheese sauce (I used my cheese from the instant macaroni video on my channel using water instead of milk as the base)

Topping:
1/4 -1/2 cup bread crumbs
1-2 tbsp nutritional yeast

You will need a dutch oven pot or an oven safe pot.

Cooking Instructions

First cook your rice according to instructions. Then steam your broccoli for only 1-2 minutes. Stir fry or cook your chicken in seasonings I used onion powder,vegan chicken seasoning and pepper use a little oil or broth for oil free. Bring your cheese sauce to a boil, add cooked rice,chicken sub and broccoli stir until combined smooth it down take off heat pour over a little more broth (optional) and sprinkle on bread crumbs and nutritional yeast broil for two minutes, make sure your pot is oven safe! I like to place a pan underneath it so the bottom won’t cook.
