Simply Inspired: Tuna Zucchini Melt. Start with 1 whole zucchini halved. Preheat the oven to 350. Use a spoon to remove the core. Once cored, bake the zucchini for 15 mins until the flesh is tender. Crush or blend crackers from a Jenny Craig Tuna Salad Kit for a breadcrumb consistency. Get your boats from the oven… and fill with Jenny Craig Tuna Salad. Sprinkle on the cracker crumbs. And add a pinch or two of paprika. Put the loaded boats back in the oven for 3-4 minutes. Dig in while they’re hot!
