You must try this authentic Maharashtrian recipe, extremely popular in the Vidarbha region of Maharashtra and my favorite meal !!! Although it looks complicated, you will be surprised how easy it is to prepare. This is also one of the healthiest recipes – simple food full of protein, so it will also help you in achieving your health (weight loss) target.

Ingredients for Kadhi
700 ml buttermilk
5 tbsp besan (gram flour)
3 cloves of garlish (crushed)
3 chillies (crushed)
1 inch ginger (crushed)
3-4 curry leaves
salt as per your taste
2 tsp turmeric powder
3 tbsp oil
2 tbsp chopped fresh coriander
1 tsp cumin seeds (jeera)
1 tsp mustard seeds (rai)
1 tsp asafoetida (hing)

Ingredients for Gole (balls)
200 gm chana dal soaked overnight
2 chillies
3 cloves of garlic
1 tbsp coriander
salt as per your taste

Preparation of Gole balls
– Add all the ingredients for Gole (balls) to the grinder and grind into a fine paste. While grinding, do not add more than 2 tbsp water. If, by mistake, you add more water, you can compensate it with 1-2 tbsp besan. The mixture should not be watery because we want to make balls with it.
– Now apply oil to your palms and start making the balls as shown in the video.

Preparation of buttermilk mixture
– Add besan to the buttermilk and keep stirring. Make sure there are no lumps.
– Then add 1 tsp salt and 1 tsp turmeric. Mix well.
– This is your buttermilk mixture which will be used in the next step.

Procedure to cook
– Take a deep vessel for best results. It will ensure that the kadhi cooks well and the gole (balls) do not stick to each other.
– Add oil, cumin and mustard seeds, asafoetida (hing), garlic, ginger and chillies. saute for a minute.
– Now add salt and 1 tsp turmeric.
– Add the buttermilk mixture and let it boil for 10 minutes on medium flame.
– After 10 min, lower the flame and add the Gole (balls) to the kadhi. Place them gently apart from each other. DO NOT STIR for at least 5 minutes.
TIP : If you are doubtful whether the balls will break apart while placing them in kadhi, you can steam them separately before this step.
– After 5 mins, the balls will be cooked and they won’t break while you stir. So give it a nice stir.
– Add coriander to garnish.
– Serve with rice, roti, chapati or jowar/bajra bhakari.
