A very easy Tuna Sandwich recipe, packed with veggies & flavour!!
Perfect to eat when you run out of ingredients during a #quarantine like Covid-19.
Easy & Healthy Tuna Sandwiches
Yield- about 4 sandwiches.
130gms Light meat Tuna (drained)
1tbsp chopped Celery
1tbsp chopped Red Onion
1tbsp cooked & chopped Spinach
4 to 5 chopped Capers
3 to 4 chopped Jalapeños
1 1/2tbsp Light Mayo
1/2 tbsp Dijon Mustard
1/2 tbsp Low-fat Yogurt
20gms Grated Cheddar cheese
Salt & Pepper to season
Smoked Paprika to dust
Bread of choice
Butter (optional but recommended)
Chips/Crisps to serve with (optional)
Process:
1)Lightly wilt the spinach in a pan with a little oil. Once wilted (few seconds) drain it with a spoon against the side of the pan. Chop finely along with the other ingredients.
2) Once the Tuna is drained, begin adding all the ingredients in their prescribed order above, mixing gently between every couple of additions of the ingredients.
3) Taste. Then begin assembling the sandwich as in video. Told you it was that easy. 🙂
4) The Tuna mix, can be kept in the fridge for upto two days. Enjoy!
