1.5 cups chopped cucumber
1.5 cups Pico De Gallo ( or you can dice a medley of tomato, onion and green pepper w/ cilantro)
2 tbsp olive oil
1-2 tbsp lemon juice
1 tsp salt
1 tsp pepper
