Here’s how I make Shan Yao Sponge cake!
Shan Yao is a root vegetable that is SUPER healthy! Chinese doctors recommend using it to completely replace rice if possible. But unlike many super food recipes, this one is actually yummy (nothing like Kale).

With only 3 ingredients, it’s also very easy to make. I never make the standard recipe as I like to use the whole bundle of Shan Yao, but here’s the recipe I use as a baseline:

170g shan yao
2 eggs
60g dates
15g sugar

I never actually use the sugar, I just add a little extra date and the recipe is plenty sweet enough.

Let me know in the comments below if you think the Vitamix should’ve been able to handle those dates… I thought it was some kind of super blender, but it seems not…
