🛑 INGREDIENTS 🛑
Oats (coarsely ground) – 1/2 cup
Water – 6 cups
Butter/Olive Oil – 1/4 cup
Garlic (finely chopped) – 2 tbs
Spring onion (white part) – 3 tbs
Celery (finely chopped) – 1 cup
Capsicum (finely chopped) – 2 tbs
Carrots (finely chopped) – 2 tbs
Mushroom (finely chopped) – 2 tbs
Corn – 2 tbs
Salt – 1/2 tsp
White/Black pepper – 3/4 tsp
Soy sauce – 2 tsp
Spring onion for garnishing

🛑 METHOD 🛑
Step 1:
Pour 6 cups of water into a large vessel. Then add coarsely ground oats..
Cook the oats until its medium-thick consistency. You can adjust the thickness according to your taste.

Step 2:
Meanwhile melt butter in a pan at medium-low heat… Add garlic and saute for few seconds. Then add spring onion and celery.
Next add the soy sauce and rest of the vegetables and saute for 2 mins.

Step 3:
Now add the saute vegetables to the oats mixture..season it with salt and pepper.
Let it simmer for 6-7 minutes at medium-low flame.
If the soup gets very thick, loosen it up by adding hot boiling water and let it simmer for another 3 mins.
Your yummy and healthy soup is ready..
Garnish it with some spring onion or parsley…
