Pumpkin Turkey Chii
– 1 can pumpkin puree
– 1 can beans of choice, rinsed
– 1 can diced tomatoes
– 1 8 oz can tomato sauce
– 1 lb ground turkey
– 2 bell peppers chopped
– 2 garlic cloves minced
– 1 mediu onion choped
– 1 Tbsp Chili poweder
– Salt and Cayenne Pepper to taste
Saute onions and garlic until tender. Add ground turkey and cook through. Add bell peppers and let cook until tender. Add the remainder of the ingredients and simmer over medium low heat for 20-30 minutes. Top with sour cream or greek yogurt, cilantro, avocado, cheese.
