2 Ripe Bananas, Mashed
1/3 C. Organic Crunchy Peanut Butter
2/3 C. Unsweetened Applesauce
1 Tsp. Vanilla
1/2 Tsp. Salt
1/2 Tsp. Cinnamon
1 1/2 C. Quick or Old Fashioned Oats
1/4 C. Nuts (I used dry pecans.)
1/4 C. Semi Sweet Chocolate Chips
1/4 C. Shredded Coconut

7-8 ice cubes
3 scoops of ice-cream (i used so delicious cookies and cream ice-cream)
1/2 tsp vanilla extract
1 tbsp maple syrup
2/3 cup plant-based milk

3. Chocolate brownie pancakes
1/4 cup cocoa powder
1/3 cup gluten-free plain flour (you can sub. for plain flour)
1/3 cup natural coconut yoghurt
1/4 tsp baking soda
pinch of salt
1/4 cup maple syrup
1 tbsp almond milk

4. Healthy banana bread
2-3 ripen bananas
1/4 almond milk
1/3 cup coconut oil, melted
1/2 cup honey
2 eggs
1 tsp bicarbonate of soda
1 tsp ground cinnamon
1/2 tsp salt
1 tsp vanilla extract
1 3/4 cup whole-wheat self raising flour

5. Healthy lemon tart with gluten-free almond flour crust
2 cups blanched almond flour
½ teaspoon sea salt
2 tablespoons melted coconut oil, plus more for greasing
1 large egg
For the curd:
3 eggs
¼ cup raw honey
¼ cup coconut oil
Zest and juice of 2 lemons (about ½ cup)
