I am happy to report that I managed to make healthy vegan shortbread cookies! The best part is, these cookies are super easy to make and delicious, yet they do not contain any butter, oil, refined sugar or gluten!

Healthy Vegan Shortbread Cookies

3/4 cup ground almonds
1/4 cup brown rice flour or starch (arrowroot, tapioca, potato, corn)
1/4 tsp salt
2-3 Tbsp maple syrup

Bake in the preheated oven at 160 degrees Celcius for 22 – 25 minutes (until the edges are slightly golden). Cool completely and store in an airtight container.
