This healthy version of Lemon Blueberry Bread recipe produces a perfectly moist, flavorful and delicious loaf of bread in no time! It has a combination of tart, sweet and bright flavors.
Preheat oven to 350 degrees
Add in a medium bowl:
1/3 cup yogurt, 1/3 cup honey, 1/3 cup coconut oil, 2 eggs and 3 tablespoons lemon juice. Stir to combine.
Add to the bowl 1 1/2 cup all purpose flours, 1 teaspoon baking powder and 1/2 teaspoon salt. Stir to combine.
Add to the mixture 1 cup blueberries and the zest of one lemon. Bake in oven at 350 degrees for 45-55 minutes, or until toothpick comes out clear in center.
