Upgrade the typical egg toast/salad with the addition of avocado. Avocado has great healthy fat that makes this even more delicious and because it is naturally creamy, you don’t have to use mayo! This works as a great toast as well as salad/side. Do check out the tips ya! 🙂

Ingredients:
1. 3 boiled eggs
2. Half avocado
3. 2 tsp chicken stock powder
4. 1/2 tbsp whole grain mustard or grounded mustard
5. 1/2 tbsp erythritol
6. 1/2 tsp salt
7. 2-3 tbsp unsalted butter [use 1 tbsp to make the “paste”]
8. 1-2 tsp black pepper
9. Some coriander
10. Sourdough bread [this mixture can be used for up to 7-10 slices of bread]. Feel free to use any other kinda bread.

Tips:
1. The secret to this delicious meal is to mix the paste’s ingredients in a pan with super light heat. Adding it directly into the egg and avocado will not give you the same taste.
2. Do not overcook the paste, lesser than 5min of heat should do the work.
