Learn how to make the best Vegan Chicken Noodle Soup recipe ever! It’s also happens to be a low-calorie meal! I love this vegan recipe especially during the winter because it warms me up!
Here’s the vegan recipe!
INGREDIENTS
– 2 Tbsp. vegetable oil
– 2 medium onions, chopped
– 7 to 8 medium-sized carrots, diced
– 5 celery ribs, diced
– 12 oz. frozen mixed vegetables bag
– 1 tsp. salt
– 1 tsp. parsley
– 1/4 tsp. ground thyme
– 2 cups Rotini noodles
– 2 bags Vegan Chicken Strips
– 7 vegetable bouillon cubes
– 2 quarts (8 cups) + 3 quarts (12 cups) of water
DIRECTIONS
1 – In large pot, bring water (2 quarts) to boil. While boiling, add bouillon cubes until dissolved.
2 – In large pan, add vegetable oil and saute onions, carrots, and celery until vegetables are softened (but not mushy).
3 – Microwave the vegan chicken until cuttable, then dice into bite-sized pieces.
4 – After bouillon has been dissolved and vegetables are fully cooked (step 1 and 2), add all ingredients to large pot including: cooked vegetables, frozen mixed vegetables, uncooked noodles, salt, parsley, ground thyme, 3 more quarts of water, and vegan chicken. Stir.
5 – Cook for about 30 minutes or until noodles have reached desired texture.
