It’s not wheat it’s not a grain, it’s a seed! Buckwheat is one of the best carbs you can put in your body. It’s loaded with fiber, plant protein, and tones of vitamins and minerals to keep your body running and happy. I remember when my mother used to make Buckwheat for me and my five sisters for dinner. We would fight for seconds because it was so good.
You can make it with some olive oil but I kicked it up a notch and made a delicious and energizing salad to keep you full for the entire day. This buckwheat salad is so colorful and delicious I’m sure one you try it, your going to make it every week! I love the combination of the red from the cherry tomatoes, the yellow from the bell pepper, and the green from the cucumbers.
I also made a really simple dressing with just olive oil, lemon juice, salt, and pepper. It’s really easy and simple to make so I hope you give it a try.
