INGREDIENTS

Raw Courgette Salad with Garlic Prawns (Serves 2)

2 Cloves of Garlic
1 Red Onion
1 Handful of Coriander (Cilantro)
1 Raw Courgette (Zucchini)
1 Lemon
Salt & Pepper to taste
Chilli Oil (Optional, you can use regular EVOO)
2 Tablespoons Avocado Oil
150-175g Raw King Prawns (Shrimp)

Quinoa & Giant Couscous with Veggies (Serves 2)

2 Large handfuls of wholewheat Giant Couscous
2 Large handfuls of Quinoa
1/2 Vegetable Stock Cube
200ml of Boiling Water (more if you need)
250-300g Fresh Asparagus
1/2 a Courgette (Zucchini)
Avocado Oil (as required for cooking)
75g (2 large handfuls) of Sun Dried Tomatoes
20g Feta Cheese

Sweet Potato, Kale & Tomato Soup (Serves 4-6)

2 Sweet Potatoes
1 Red Onion
2 Cloves of Garlic
1 Fresh Red Chilli
4 Large Plum Tomatoes
2 Large Handfuls of Kale
Basil (5-7 Leaves)
Salt & Pepper to taste
