An easy salad perfect for January that is nourishing, filling and delicious. Start with this healthy base of quinoa, leafy greens, cabbage, tomatoes, pepper, cucumber, red onion and herbs. Top it with a protein of choice and change it up each week or day for a new salad; like chickpeas, steamed salmon or prawns.
Finish it with a tasty mustard dressing.
Here’s how to make the dressing:
~ â…“ cup avocado oil
~ 3 Tbsp white wine vinegar
~ 2 Tbsp Dijon Mustard
~ Salt & Black Pepper to taste
Combine and mix well, or add to a jar and shake well.
