Protein Sweet Potato Casserole Recipe!
Macros for each Personal Sweet Potato Casserole:
221 Cals, 39g Carbs, 1g Fat, 14g Protein!
Ingredients (makes 5):
3 Large Sweet Potatoes (about 300-320g raw with skin)
75g PEScience Gourmet Vanilla Select Protein
5g Ground Cinnamon
10g Zero Cal Sweetener of your choice
50g Mini Marshmallows
Directions:
1.) Preheat oven to 400 degrees F. Now take your sweet potatos and poke a bunch of holes in it with a fork. Line oven safe pan with aluminum foil and add sweet potatoes to oven for 45 minutes until you can press in an indention in them when you press against them.
2.) Now carefully take the skin off your sweet potatoes and add the sweet potatoes to a bowl. Add your protein powder, cinnamon and sweetener to the sweet potato bowl and mix till smooth.
3.) Now add to your 5 oven safe ramekin bowls and equally add the sweet potato mixture to each bowl. Then cover each with 10g mini marshmallows. Add to the oven on 350 degrees F for 10-12 minutes till melted. Take out and enjoy this bowl of heaven!
