Samo Millet (Moraiyo) Dosa:

Ingredients:

Samo millet/little millet/ Moraiyo – 1 cup
Urad dal(Split Black Gram) – 1/4 cup
Methi/fenugreek seeds – 1tsp
Sago/tapioca pearl – 2 tbsp
Salt to taste
Water – 1/4 to 1/3 cup or as needed
Oil/ghee for roasting

Instructions:

Rinse the Samo Millet, Urad Dal, methi and sago, and soak them in water for 6 -8 hours or overnight.
Drain the water and grind the soaked mixture into a smooth batter using a little water.
Add salt to taste and mix well. Allow the batter to ferment for 8 hours or overnight.
Heat a non-stick tawa or griddle on medium heat, and grease it lightly with oil.
Pour a ladleful of batter onto the center of the tawa, and spread it gently in a circular motion to make a thin dosa.
Drizzle a little oil/ghee around the edges of the dosa, and cook until the bottom turns golden brown.
OPTIONAL: -Flip the dosa and cook for another minute until the other side is cooked as well.
Serve hot with your favorite chutney or sambar.
