When it comes to healthy breakfast recipes, I’m obsessed with these sweet potato egg nests. Made with a spiralizer, they’re one of my favorite recipes for a weekend brunch or when you’d like to dazzle guests. Even better? Start to finish, they only take about 15 minutes to make.
Today I’m making this recipe with sweet potatoes, but at the end of the video I’m also showing you how to use other spiralized vegetables to create a rainbow of egg nests. The beauty of this recipe is that it suits a variety of diets, including gluten-free, paleo, whole30 and vegetarian. And with different vegetables and a variety of garnishes, you’ll never get bored with this recipe. Enjoy!
