Ingredients (serves 8)
• 2 cans cream style corn
• 1 cube stock powder
• 6 cups water
• 400g chicken mince or finely chopped chicken meat
• 2 tbsp soy sauce
• 4 cups mixed frozen vegetables/ chopped fresh vegetables
• 4 eggs, beaten
Method
1. In a saucepan combine cream style corn, 2 cups water and stock and bring to the boil
2. Stir in chicken mince and soy sauce and return to the boil
3. Add the mixed vegetables and continue to cook
4. Gradually add beaten egg while stirring the soup
5. Remove from heat and serve
