It takes less than 10 minutes to whip up and is made with Tiger Nuts flour Seriously the most delicious, light, fluffy and comforting treat or snack!
Wet ingredients:
• 1 cup shredded zucchini (don’t squeeze water out)
• 3 eggs
• 1/4 cup maple syrup or honey
• 2 tbsp oil (coconut, avocado…)
• 1 tsp vanilla extract
Dry ingredients:
• 1 1/2 cups tiger nut flour
• 1/3 cup cocoa powder
• 1/3 cup arrowroot or tapioca flour
• 1/2 tsp baking soda
• 1/4 tsp salt or a pinch
• 1/4 cup chocolate chips (optional but high recommend)
Directions:
• preheat oven to 350 degrees f
• line an 8×4 load pan with parchment paper
• combine wet ingredients in a bowl
• sift in dry ingredients and whisk everything until fully combined
• fold in chocolate chips
• pour batter into loaf pan
• bake for 35-40 minutes
• let cool for 10 minutes before removing and slicing
• storage: 1-2 days at room temperature or 1 week in the fridge
