Ingredients
: 1 1/2 cup thick poha
: 2 medium sized onions finely chopped (or 1/2 US sized onion)
: 1 green chili cut lengthwise
: Chop 8-10 curry leaves
: 1 tbsp fresh coriander finely chopped
: 2 tsp lime juice (optional)
: 4 tbsps ghee
: 1 tsp mustard seeds
: 1/2 tsp cumin seeds
: 1/4 tsp turmeric powder
: Salt as per taste
: 1/2 tsp sugar
: 2 tbsp fresh grated coconut for garnish (optional)

Steps:
: First rinse thick poha with water in a sieve and let the excess water drain off the sieve.
:Then chop onion, green chili, curry leaves, fresh coriander and lime.
: Heat up a pan to a medium flame. Add ghee to the pan and once the ghee is hot, add mustard seeds, cumin seeds, green chili, curry leaves, chopped onion and saute it until the onion softens up (for around 5-6 minutes).
: To the chopped onions, add turmeric powder and mix it again.
: Add poha to the pan, salt and sugar and give it a good mix.
: Then garnish the poha with freshly chopped coriander, fresh grated coconut (optional) and some lime juice
(optional).
: At last add a little ghee and turn off the flame. Kanda poha is ready to be served.
