You need 8 cups of veggies. You can add eggplant and bell peppers as well.
I Used:
2 large Zucchini, cut in halves
1/2 Large Onion, sliced
4 Carrots, chopped
2 Cloves Garlic, minced (I used 1 large clove)
1/4 cup Olive Oil
2 TSP Dried Basil leaves
Salt to Taste
1/4 Cup Parmesan Cheese
Mix it all up in a bowl except the cheese, put into a glass dish and put in the oven at 425 degrees about 45 minutes to an hour. Once cooked through, sprinkle with cheese and enjoy.
Approx 190 calories per serving. Serves 4.
