Ingredients:
1 cup grated potato
1/2 cup grated beetroot
1/2 cup grated carrot
1/2 cup grated cabbage
1/3 cup chopped coriander leaves
1 cup gram flour
1 cup rice flour
2 eggs
1 tsp black pepper powder
Salt to taste
1/2 cup curd
2-3 capsicums, ring-shaped and deseeded
Oil for frying
Instructions:
Prepare the Vegetables:

In a large mixing bowl, combine the grated potato, grated beetroot, grated carrot, and grated cabbage.
Add the chopped coriander leaves to the mixture.
Make the Batter:

Add the gram flour and rice flour to the vegetable mixture.
Crack the eggs into the bowl and mix well to combine.
Stir in the black pepper powder, salt to taste, and curd. Mix until a smooth batter forms. The batter should be thick enough to hold its shape but not too stiff.
Prepare the Capsicum Rings:

Slice the capsicums into thick rings and deseed them.
If the rings are too large, you can cut them into smaller pieces to fit your preference.
Fill the Capsicum Rings:

Heat oil in a frying pan over medium heat.
Spoon the prepared batter into the capsicum rings, filling them generously.
