My girlfriend Tatiana (Brazilian/Hungarian) go to the Rackozi Ter Piac (open market) in Budapest. Our goal was to make meals that are:

1) Healthy
2) Inexpensive – each meal came to 800 HUF / 2.40 EURO / 2.60 USD
3) Time-saving during the week

Our meals were packed with super foods. Ingredients are below:

Lentil Soup
– large bag of red lentils (they are the only ones that cook quickly)
– 2 chopped onions
– entire bunch of garlic chopped
– salt to taste
– cumin to taste
– red pepper to taste

Sweet potato salads
– roasted sweet potatoes (olive oil, salt, pepper)
– spinach and rukkola
– goat cheese
– various seeds (sesame, flax, chia)

Chicken and cauliflower
– chicken breast cooked in coconut oil
– roasted cauliflower (olive oil, paprika)

Lentil Quinoa Salad
– black small lentils
– chopped parsley
– lemon juice
– feta cheese
– cooked quinoa

Salsa
– lime juice
– chopped tomatoes
– chopped onion
– koriander / cilantro
– chopped or pressed garlic
