🌿 Jennifer Aniston Salad – Quinoa & Chickpea

Ingredients:
• Cooked quinoa: 1 cup
• Cucumber: 1 cup, chopped
• Red cabbage: 1 cup, shredded (soaked in ice water 15 min)
• Onion: 1 cup, chopped
• Cooked chickpeas: 1 cup
• Parsley: 1/2 cup, chopped
• Mint: 1/3 cup, chopped
• Almond flakes: 1/2 cup

Dressing:
• Olive oil: 3 tbsp
• Lemon juice: 3 tbsp
• Salt & black pepper: 1/2 tsp each

Instructions:
1. Soak red cabbage in ice water 15 min, then drain.
2. Combine quinoa, cucumber, cabbage, onion, and chickpeas in a bowl.
3. Add parsley and mint, mix gently.
4. Whisk olive oil, lemon juice, salt, and pepper; pour over salad.
5. Top with almond flakes and serve.
