Vietnamese Vegan Mushroom & Mung Bean Porridge 🍄🥣
Light, comforting, and ready in about 30 minutes thanks to this simple freezer trick.
Ingredients:
• 100g jasmine rice
• 50 – 80g mung beans
Rinse well, cover with water and freeze overnight
Next day:
• 1L water + salt, simmer until soft and creamy
Mushrooms:
• Any type of mushrooms (blend half, slice half)
• Shallots
• Mushroom seasoning, salt & black pepper, vegan fish sauce (optional)
Sauté mushrooms, then mix into the porridge.
Top with chilli flakes & spring onions.
Healthy, filling but not heavy, perfect when you want something warm without feeling too full.
