Fig jam and goat cheese is one of my favorite combinations! Here is how I made dinner. French Onion Soup Ingredients • 8 sweet onions, thinly sliced • 1 stick salted butter • 1/4 cup sugar • 1/4 cup flour • 2 tablespoons balsamic vinegar • 8 cups beef broth • 1/2 teaspoon black pepper • 1/2 teaspoon garlic powder • 6 sprigs fresh thyme • 2 sprigs fresh rosemary, chopped • Salt, to taste Instructions Add the onions, butter, and sugar to a large pan and cook over medium heat for about 35 minutes, stirring occasionally, until slightly caramelized. Stir in the flour and cook for 1 minute, then add the balsamic vinegar while scraping up the browned bits from the pan. Pour in the beef broth and add the pepper, garlic powder, thyme, rosemary, and salt. Cover, bring to a simmer, then reduce heat to low and simmer for 20 minutes. Fig & Goat Cheese Grilled Cheese Ingredients • Bread • Fig jam • Goat cheese • Fresh mozzarella • Butter • Fresh rosemary Instructions Spread fig jam on the bread and top with goat cheese and mozzarella before closing the sandwich. Melt butter in a pan with a sprinkle of rosemary over medium heat, then toast the sandwich until the bread is golden and the cheese is melted.
