Ingredients:
-3 lbs Chicken Breast (1,360g raw)
-2 Cups Dry White Rice (≈ 370g dry)
-1 Cup 0% Greek Yogurt (240g)
-1 Cup Low-Sodium Chicken Broth (240mL)
-2 Cups Part-Skim Mozzarella Cheese (224g)
-Juice of 2 Lemons (80g)
-1 Tbsp Lemon Zest
-1 Tbsp Minced Garlic (15g)
-1 Tbsp Italian Seasoning
-1 Tsp Salt
-1 Tsp Black Pepper
-4 Cups Fresh Spinach (120g)
Instructions:
1.) Add chicken, broth, lemon, garlic, and seasonings to crockpot; cook low 6–7 hrs or high 3–4 hrs.
2.) Add spinach near the end to wilt.
3.) Cook rice; fluff.
4.) Shred chicken, stir in yogurt and mozzarella until creamy.
5.) Portion rice into 7 containers; top with chicken mixture.
