Gluten-free bread made with red lentils and quinoa high in protein and fermented for better digestion.
I am testing healthy bread recipes, and this one is almost perfect… except for one problem. It smells like fried food the next day 😅
I want to fix this without losing the soft, spongy texture.
Any ideas?

Here are the ingredients:
Makes 5–6 buns
• 1/2 cup red lentils (soaked overnight)
• 1/2 cup quinoa (soaked overnight)
• 100 ml water
• 2 tbsp olive oil
• 2 tbsp psyllium husk flakes
• 1/2 tsp salt
• 1/2 tsp baking soda + 1/4 lemon juice or 3/4 tbsp apple cider vinegar
