Sourdough Starter: 1/2 cup (100g) active starter (100% hydration)
Flour: 3 1/3 cups (420g) all-purpose or bread flour (10.3% protein)
Water: 1 cup (240g) room temperature water
Olive Oil: 1.5 tbsp (20g)
Honey: 1/2 tbsp (10g)
Salt: 1.5 tsp (9g)
Cold Fermentation: 12–14 hours (minimum 8 hours)
Baking Methods:
Option 1: Baking Sheet (with steam)
Preheat to 465°F (240°C). Bake for 15 mins with steam
Lower to 400°F (200°C), remove steam, and bake for 15–20 mins
Option 2: Dutch Oven (preheated)
Bake at 480°F (250°C) for 20 mins with the lid on
Remove lid, lower to 410°F (210°C), and bake for 15–20 mins until golden
Note: Adjust baking times based on your oven’s performance!
