✨ Raw Handcrafted Chocolate
 
Ingredients:
• 100 g raw cacao butter
• 140 g raw cacao paste
• 50–60 ml natural liquid sweetener
 
Optional:
• 1 tsp pure vanilla extract
• pinch of fine salt
 

 
How to make:
 
1. Finely chop cacao butter and cacao paste.
2. Melt gently using a double boiler.
3. Do not heat above 46°C / 115°F.
4. Remove from heat around 43–44°C / 110–112°F — the temperature will continue rising.
5. Cool chocolate to 29°C / 84°F.
6. Add sweetener, vanilla, and salt.
7. Reheat gently to 31°C / 88°F.
8. Pour into molds and let crystallize.
