Healthy Chicken Enchiladas Bake (High Protein, Weight Loss Friendly)
🧾 Ingredients
6–8 whole wheat, corn, or low-carb tortillas
1 cup cooked shredded chicken (boiled or grilled)
1 cup black beans (rinsed & drained)
1 cup corn (fresh or frozen)
1 cup tomato enchilada sauce (or thick tomato salsa)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp cumin
Salt & black pepper to taste
1/2 cup low-fat cheese (optional but recommended)
1 tbsp olive oil (optional)
🍳 Instructions
1. Prepare filling
In a bowl mix:
shredded chicken
black beans
corn
spices (garlic powder, paprika, cumin, salt, pepper)
Mix everything well so flavors combine.
2. Assemble enchiladas
Take tortillas
Add 2–3 tbsp filling inside each
Roll tightly and place in baking dish
3. Add sauce
Pour tomato enchilada sauce evenly on top
Make sure all tortillas are lightly covered
4. Add cheese (optional)
Sprinkle low-fat cheese on top for creamy texture
5. Bake
Preheat oven: 180°C (350°F)
Bake for 20–25 minutes
Until cheese melts & top becomes slightly golden
🍽️ Serve
Let it rest 5 minutes
Serve warm with salad or yogurt dip
