HOMEMADE VEGETABLE SOUP
500g mushrooms
2 large carrots
2 large zucchini’s
3 Capsicums (one of each colour preferably)
1 cup diced onion
2 tablespoons oil
1/2 tsp nutmeg
1/2 tsp ginger
1 tsp paprika
1 tsp cumin
2 tbsp Garlic
1. Wash, peel and cut up vegetables.
2. Add oil to pot
3. Add onion, nutmeg, ginger, paprika and garlic
4. Stir and let cook until onions get softer
5. Add 2 cups water
6. Stir and add in vegetables
7. Add an extra 1-2 cups water, depending on how thick u want your soup
8. Stir and cover.
9. Bring to a boil and then turn down to medium heat.
10. Let simmer for 20 mins, stirring occasionally.
11. Blend until smooth. ENJOY! 😋
NOTES: You can change the amount of spices to suit your taste.
You can also change the vegetables slightly and it won’t change the flavour dramatically as long as you have majority being pumpkin it will still taste amazing! 🤗
