HEALTHY SNACK RECIPES – Stove Top Popcorn | Oven Roasted Nuts | Oil Free Snacks

Homemade popcorn is one of the easiest healthy snacks to make, but it took me so long to try it! My Stove top popcorn recipe is as simple as it gets, making oil free popcorn that’s not only one of my favourite healthy snack recipes but as versatile and customisable as you like!
Advice for making stove top popcorn:
Stove top popcorn (or rather any homemade popcorn) expands a lot, so try to use a deep pot with a heavy base when making stove top popcorn. Make sure that the corn kernels are in an even layer at the bottom of the pan rather than piled high. This ensures that the corn kernels are heated evenly and results in you getting more popcorn at the end.
Finally do remember that just because you turn off the heat – the popcorn isn’t done yet! Stove top popcorn will continue to cook from the residual heat and you might get a few late kernels so leave the lid on until all the popping has stopped (usually a few minutes).

Microwave homemade popcorn
You can easily make homemade popcorn in the microwave. Again, pour the corn kernels in an even layer, seal with the lid and place in the microwave for a few minutes. Homemade popcorn isn’t an exact science, and depending on your microwave settings, your oil free popcorn could be done in more or less time.
Stove Top Popcorn (Oil Free Popcorn) Recipe:

Ingredients:
• ¼ cup corn kernels
1. Heat a deep pot on medium heat – test to see if it’s ready by sprinkling water on the surface to see how quickly it evaporates
2. Pour corn kernels so that they cover the bottom of the pot in one even layer
3. Cover with a tight fitting lid and stay close as the kernels begin to pop and make popcorn
4. Once the pops slow to more that 2 seconds between each pop, turn off the heat but leave the lid on – homemade popcorn can still continue to pop a few times even after the lid is off for a couple minutes
5. Remove from the stove, take off the lid and sprinkle your oil free popcorn with seasonings of choice

Oven Roasted Cashew Nuts Healthy Recipe:
The second of the healthy snack recipes is for my oven roasted cashew nuts.
To make oven roasted cashew nuts healthy simple remove the oil – it really is that simple. I’ve tried recipes for oven roasted cashew nuts before but most of them are not for oil free roasted nuts and the ones that are just sprinkle salt on top of the roasted cashew nuts which inevitably falls off.
Making a salt-solution by dissolving salt prior to adding them onto the roasted cashew nuts, allows for the salt to stick to the cashew nuts like a coating around the roasted cashew nuts. I actually prefer the oven roasted cashew nuts healthy style it to traditional roasted cashew nut recipes.

Like the stove top popcorn recipe – cooking times can vary. It will likely come down to you watching your oven roasted cashew nuts diligently to determine when they are done. Don’t let the oven roasted cashew nuts get too dark, this can result in slightly burnt, bitter tasting roasted cashews that easily overpower the cashew nuts.
You don’t have to use all of the salt solution on the oven roasted cashew nuts – its up to personal preference, I ended up only using a couple teaspoons.
Oven roasted nuts
You can make any oven roasted nuts recipe healthy by simply removing the oil and following the same steps as this oven roasted cashew nuts healthy recipe. Choose any roasted nuts that you prefer and add your favourite seasonings.

Oven Roasted Cashew Nuts Healthy
Ingredients:
• 1 cup Raw Cashew Nuts
• 2 tablespoons Hot Water
• ¼ teaspoon Salt
1. Preheat oven to 150c
2. Line a baking tray with parchment paper and spread cashews out in one layer
3. Roast in the oven for 15 – 20 minutes, keep and eye out – if they start to brown take the cashew nuts out
4. While the cashew nuts cook – dissolve the salt into the hot water
5. Take the cashew nuts out and spoon the salt solution over the cashews
6. Return the cashew nuts to the oven and roast for a further 20 – 25 minutes until desired browning has been reached
7. Once done, turn off oven and leave oven roasted nuts to cool completely with the door open
