Here are my top 3 favorite breakfast recipes that I eat for lunch because I don’t eat breakfast :3
1. Peanut butter oatmeal (can use a nut-free spread as substitute)
– 1/2 cup oats
– 1 tbsp peanut butter
– 2 tsp sugar
– dash of cinnamon
– 1 banana
2. Chocolate oatmeal
– 1/2 cup oats
– 2 tsp cocoa powder
– 1 tsp peanut butter (can replace for a pinch of salt)
– 2 tsp sugar
– 1 banana
3. Oat flour pancakes
– 1 cup oats (blended) or 1 cup oat flour
– 1 and 1/2 tsp baking powder
– 2 tbsp melted butter/ coconut oil (don’t use flavorless oil or olive oil, will affect texture and flavor)
– 1 cup milk/ plant milk (can try water, but I haven’t tested that before)
– 1 egg (necessary for the extra fluffy texture)
