This carrot cake recipe is sooooo good ♡ Super easy to make and the ingredients are healthy! I love my mom’s recipe cause it’s vegan, healthy and delicious! I like to make this one when I have cravings and I want something sweet and I don’t feel guilty. I also like to make home made ice cream to combine it with the carrot cake and it’s the perfect combination. I just use some frozen bananas, peanut butter, vanilla extract and I blend everything to make it like ice cream! It tastes so good!

Here are the ingredients for my mom’s carrot cake:
1. 2 cups rolled oats
2. 1 cup almond flour
3. 2 tbsp corn starch
4. 2 1/2 tsp baking powder
5. 2 1/2 tsp cinnamon
6. 1/2 tsp ginger
7. 1/2 tsp nutmeg
8. 1/4 tsp salt
9. 1 3/4 almond milk
10. 1 tbsp egg replacer with 1/4 cup water
11. 1/3 cup agave
12. 1 tsp vanilla extract
13. 3/4 carrot pealed and shredded
14. 1/2 cup chopped nuts
15. Chocolate chips unsweetened or dark

Instructions:
1. Preheat oven at 380 F and grease a pan with coconut oil
2. Combine all dry ingredients
3 Add the wet ingredients to the dry mix
6. Add carrots and nuts and mix everything
7. Add chocolate chips ( unsweetened or dark)
8. Bake for 40 mins
9. Remove from the pan
10. Let it cool down for 30 mins and enjoy!!!
