Ingredients

Potatoes – 4 pcs
Spinach – 300 grams
Carrots – 2 pcs
Green onion – 1 stalk
Green garlic – 2 cloves
Eggs – 3 pcs
Cream – 1 tea cup (200 ml)
Grated cheese – 50 grams
Olive oil – 3 tablespoons (30 ml)
Salt – 1 teaspoon
Black pepper – 1/2 teaspoon
Paprika – 1 teaspoon
Oregano – 1/2 teaspoon

Method of preparation

Cut the potatoes into small cubes and boil them in salted water for 15 minutes.
We strain them from the water and pour them into a tray.
Cut the carrots into small pieces and fry them in hot olive oil or oil for 5 minutes on a moderate heat.
Then we add the chopped spinach and green onions and garlic.
We salt. Simmer for 7 minutes on a moderate heat.
Season with oregano, black and red pepper.
Cook for 1 minute on low heat.
Add the stewed spinach with the vegetables to the potatoes in the pan.
Beat the eggs with the cream.
We water the dish. Sprinkle with grated cheese.
Bake in a preheated oven at 190°C/374°F for 25 minutes.
