Quick and healthy lunches – quinoa curd rice / high protein high fibre no onion no garlic lunch



Quinoa Curd “Rice”

Literally over 100 people asked me how to make this, it’s so so good! And it’s one of the best meals I’ve had! It’s light, easy on the stomach and so good for you!

Recipe for 2 people

1 1/2 cups cooked quinoa, cooled down
2 1/2 cups thick yogurt
1/2 cup pomegranate
1/3 cup chopped coriander
1/2 cup each grated carrot and cucumber
1 green capsicum – chopped and sauted – cooked but crispy
Salt to taste
Lots of freshly ground pepper

Tadka:
2 tbsp oil
1 tsp ground mustard seeds
1 finely chopped green chilli
10-12 torn curry leaves
1/4 tsp hing (I love a hing tadka)

Make sure that nothing in the tadka burns!

Mix everything together and eat chilled!
