INGREDIENTS:
For Green Chutney:
– 1 cup coriander + 1/4 cup mint
– 2 green chilies + 1 inch ginger
– 1/2 tsp jeera + black salt + lemon juice
– Grind with little water
For Sandwich:
– 4 slices wheat bread/ multigrain bread
– 2 tbsp green chutney
– 1 tbsp butter, soft
– 1 small boiled potato, sliced
– 1 tomato, sliced thin
– 1 onion, sliced thin
– 1 cucumber, sliced thin
– 1 capsicum, sliced thin
– Chaat masala + black salt + pepper
– Cheese slice, optional
METHOD:
1. Butter all bread slices on one side
2. Spread green chutney on 2 slices
3. Layer: potato + sprinkle chaat masala
4. Add tomato + onion + cucumber + capsicum
5. Sprinkle black salt + pepper + chaat masala again
6. Add cheese if using. Cover with other slice
7. Grill on tawa with butter till golden & crisp both sides
8. Cut diagonally. Serve with chutney + ketchup
PRO TIPS:
– Toast bread lightly before assembling = no soggy sandwich
– Cut veggies THIN or sandwich won’t press properly
– High flame while grilling = street style crisp
– Add beetroot slices for authentic Bombay style
