Ingredients:
2 tbsp olive oil
300 g chicken breast
1 medium red onion
1 medium carrot
2 garlic cloves
1 tsp ginger
1 medium zucchini
4 medium mushrooms
2 tsp lemon juice
1 tbsp soy sauce
* for 2 servings

Directions:
1- Heat a large skillet. Add olive oil, then chicken, onion, garlic, ginger, and carrots in order, and sauté until brown.
2- Add the carrots and continue to saute. Then add the zucchini mushrooms and saute them as well!
3- Add the lemon juice and soy sauce, cook for another minute, and serve hot.
