For the No-Egg:

1 1/2 cups raw pumpkin seeds
3 cups water
3/4 tsp turmeric
1 tsp black salt/kala namak (or to your taste)
Optional:
1 tsp garlic granules
1/2 tsp onion granules
black pepper to taste

For the No-Sausage Patties

3 cups veggie sausage ground https://youtu.be/DcXfnrMBaNo
3 tbsp psyllium husks
3 tbsp arrowroot powder
3 tbsp chickpea flour
3 tsp dried sage
1 ½ tsp fennel
¾ tsp thyme
¾ tsp garlic granules
salt to taste

For the Sausage Patties:

Combine the sausage patty ingredients in a bowl. Form into patties large enough to fit the bagels. Place on a parchment lined baking sheet. Bake at 350 F for 12 minutes.

For the no-egg:

Soak pumpkin seeds overnight or for 8 hours. Drain and rinse. If desired, remove pumpkin skins by rubbing and rinsing the seeds.

Add pumpkin seeds, water, seasonings and remaining ingredients to the blender. Blend until completely smooth.

Heat a well seasoned cast iron pan on medium-low heat. Pour mixture into a large circular cookie cutter (or other form) on the pan. Cook until the mixture starts to bubble and set, about 5 mins. Using a knife loosen the no-egg mixture from the cookie cutter. Remove the cookie cutter and flip the no-egg. Cook for an additional 3-4 mins.

Assemble the breakfast sandwich:

Add the sausage patty and no-egg to the bagel. Top with vegan cheese. Enjoy!

so this right here is a healthy vegan
sausage egg and cheese breakfast
sandwich made with no oil no wheat no
refined sugar and no rice you said you
wanted more breakfast options well here
is one and I can’t wait to show you how
to make your

room all right so the first thing we’re
going to do to make this breakfast
sandwich is we’re going to get our
sausage patted out and then the oven so
let’s do that now now I’m making these
sausage patties bigger than I normally
would so that they’ll fit the size of
the bagel and once I’ve got them patted
out and on the pan they’re ready for the
oven all right so the next thing we’re
going to do is make our Vegan egg and
I’m going to show you what we’re going
to use for that now I’ve done this
recipe before um I’m using some um
pumpkin seeds that I’ve soaked overnight
using some garlic powder some onion
powder um some turmeric and some black
Himalayan salt the black Himalayan salt
uh gives it that eggy kind of flavor and
then the turmeric gives it a nice color
plus it’s super healthy um the garlic
powder and onion powder are optional or
granules powders whichever you want to
use are optional but I like the flavor
that it gives to it so I’m going to use
that all right and these are the
ingredients we’re going to use um to
make the egg portion of this sandwich
let’s put it together all right so I’m
going to slide these spices um out of
the way and we’re going to take our
pumpkin seeds to the sink and rinse them
and try to get uh some of the skins off
so it’ll have less of a green color
when we’re finished making
these so I’m going to drain my pumpkin
seeds using a strainer now once I have
them in the strainer I’m rubbing them
between my hands to loosen the Skins
then I’m rinsing them now I’m going to
repeat this process a few times to get
the skins off uh you know as much as I
can but again if you’re not bothered by
the greenish color you can just leave
the skins on either way is fine now I’m
ready to put them in the blender and add
fresh water all right so the next step
is we’re going to get our spices in into
our um seeds here now I love the
Simplicity of putting a recipe like this
no egg together because at this point
it’s just a matter of Simply blending
the ingredients until the mixture is
nice and smooth all right I hope you’re
enjoying this recipe so far I want to
take one minute to address a question
that I’ve gotten a lot I received a lot
of emails and DMS asking me is a healthy
vegan diet enough now I can tell you I
eat a ton of fruits and vegetables nut
seeds mushrooms a super healthy diet but
there’s still some bases that I need to
cover most of you know that if you’re
vegan you need to be with B12 no
question but there’s some other things
that can be lacking also unless you’re
super diligent about eating specific
foods but to alleviate that worry the
best thing to do is to supplement now I
used to go to get supplements in years
past and I get vitamin D and zinc and
omegas and different things but now I

making this recipe okay so the next step
is I’m going to pour my mixture uh into
my pan now this is a well seasoned cast
iron pan um it works pretty good for
this it’s not completely nonstick um but
it is really good compared to other uh
cast iron pans as far as ability to cook
things in it I’m going to use a a large
cookie cutter now if you don’t have one
of these you can just kind of manipulate
the batter with your spatula but I do
have one of these so I’m going to use it
to kind of hold it and make the right
form for these um all right so I’m going
to get started with that if you’re

it long enough for it to set up now I’m
just going to take my knife and go
around it to loosen it so that I can
flip it and it won’t uh it won’t stick
to the sides
here okay so once the mixture has cooked
and set I simply remove the mold from
around it and flip it to cook the other
side all right so the only thing left to
do is to put the sandwich together I’m
going to use My Vegan egg here I’m going
to use my um healthy vegan sausage and
