• 200g Bread flour
• 25g Wheat flour / plain flour
• 150g Warm Water (Lukewarm)
• 25g Active sourdough starter
• 1 tsp Fine salt
• 1 tbsp olive oil
Mix everything, cover & rest for 30 mins
1st folding – cover & rest 30 mins
2nd folding – cover & rest 30 mins
3rd folding – cover & rest 30 mins
4th folding – shape up into Benetton, cover & proofing for min 4 hours room temperature (rise up double the size) or max overnight cover & cold proof in the fridge for 12-14hrs.
Sprinkles the flour, shape up and put in the pan / pre-heat dutch oven (230c, 20mins)
Score dough & carefully put into the oven.
Bake with lid on / aluminium foil covered for 20 mins.
Remove the lid / aluminium foil cover and bake additional 5-10 mins or until golden brown.
Allow to cool before slicing into it. Tadaaaaa!!!
