This is an amazingly healthy food that is easy to make and need no cooking (except if you make your own pita chips). Try this recipe and share your experience.
Ingredients:
1 cup pita chips
2 cups of Romaine lettuce, chopped
1 cup celery, chopped
1 tbsp parsley, chopped
1/4 cup spring onion, chopped (both greens and white)
1 cup English cucumber
1/2 cup tomato
1/4 cup radish (optional)
1/2 tsp sumac powder
1/2 cup pomegranate seeds (optional)
Lime Dressing:
2 tsp extra virgin olive oil
2 tbsp lime juice
1/2 tsp sumac powder
1/4 tsp cinnamon powder
1/4 tsp black pepper powder
Salt as per taste
Directions:
1. Mix all the ingredients of lime dressing and keep aside.
2. Assemble all the vegetables except for pita chips and pomegranate seeds.
3. Add lime dressing to the veggies and mix well.
4. Add pita chips and sumac powder and combine everything.
5. Serve the salad topped with some pomegranate seeds (optional).
