It’s not a secret that I eat cake every single day. Why? Because it makes me happy. Like very happy. It also made me very happy when my podcast All About Her hit 100K subscribers yesterday.
We were wondering how to mark this humble but significant milestone and my daughter said have cake! And so we did – but we went one step further. We baked the healthy no sugar vegan cake I eat every day.

Here’s what went into it:
Almond flour
Coconut flour
Cocoa powder
Arrowroot
Vegan butter
Baking soda
Erythritol + stevia
Coconut milk
Method:
Start by mixing vegan butter with erythritol and stevia → add coconut milk and whisk till smooth → fold in the dry ingredients → divide into three tins → bake till set → let them cool → layer, ice and decorate
